Your Cooking Experience

Book a single group class to try your hand at Tuscan cuisine and some of its easiest recipes. Or choose packets of several classes and culinary tours to discover local foods to buy in Florence. If you want to learn to cook your favorite recipes, choose one or more individual classes!

The school offers culinary courses for both professionals and amateurs. Learning to cook is presented in connection to the historic and artistic background of Italy. Our enrichment programs are shaped for individuals approaching Italian gastronomy for the first time and for experts who wish to refresh and deepen their cultural and technical knowledge. Cooking is a special form of art where all the senses come together in appreciation. Food must be observed for freshness and seasonability. Food needs to be beautiful. Food needs to be touched and smelled while cooking, and finally tasted to fully appreciate the full experience of well-prepared cuisine.

Cuisine has always been part of the Tuscan heritage, from the Etruscans to the times of the Romans, the Middle Ages, the Renaissance, and the present day.
Apicius culinary instructors represent Michelin-star backgrounds, specialized forms of dietetics and nutrition, professional sommelier qualifications, and professional experience in prestigious areas of the restaurant industry.

The Cooking School

The school was founded in 1997 with the goal of providing students with a complete culinary education. For this reason, no lesson or course is approached merely as a practical cooking lesson but the Italian cuisine is presented in its true context as related to the rich culture of Italy. Food can not be separated from Italy’s history, art and society: it represents an integral part of all these subjects. The school is a culinary institute which offers both academic programs and programs for amateurs. Hand-on lessons are held by professional chefs in English.

The school is equipped with:

  • One large production kitchen able to accommodate 12 students. This kitchen is modeled on a true restaurant kitchen in order to offer our professional students the opportunity to work in a setting similar to what they will find once the begin internships in Italian restaurants.
  •  One large demonstration kitchen able to accommodate 18 students. Students are grouped into work stations equipped with sink, stove tops, counter tops and all necessary utensils.
  • One fully equipped individual kitchen available for customized lessons for individuals and groups of two people.


  •  One large restaurant and lecture area which can be used by students to enjoy their creations after cooking classes. We also use this space for tastings, culinary lectures and restaurant simulations.
  •  One fully-equipped kitchen to accommodate individuals and groups up to 12 people.
  •  One state of the art wine appreciation room, to accommodate 23 students.
  •  One aula magna.

LOCATION: the cooking school is located in Florence city centre, 2 minutes far from the central railway station and 5 minutes’ walking from the cathedral.

Our Culinary Experience can be combined with Gastronomic Walking tours, behind-the-scenes visits to farms, special pastry courses, bread baking, pizza and fresh pasta workshops. Cooking can be considered a necessity, a daily performance or a form of entertainment. For some people it is merely an obligation, while for others it represents a passion. For us, cooking is a very special art form, where all senses amalgamate in its appreciation. The Art of Cooking is therefore a full, complete experience, which involves the whole body in its total sensation. This is the reason why we associate it with our art works and our cultural heritage. The Art of Cooking has been part of it, from Etruscans and up to the present.
The programs are shaped for people who approach to “art of Italian Cooking” for the first time, or have a deeper experience in the field and just to refresh and deepen their cultural and practical knowledge of this field. Each program also includes one or more cultural experience in Florence.

Weekly Programs

Mondays, 3-5:30pm – Regional Cuisine

A taste of Italy – experience how the various regions of Italy each developed a unique taste for ingredients and cooking methods. The regional birthplaces and cultural context of traditional dishes (lasagna, risotto alla milanese) will be experimented hands-on. Lessons conclude with a tasting of the delicious outcomes.


Tuesdays, 3-5:30pm – Tuscan Cuisine

Tuscany, an amazingly diverse region that hosts mountains, rolling hills, and a varied coastline. It is well-known for its refined wines, as well as several prominent seaside dishes. Explore the surrounding areas of Florence through the sense of taste and experience a different city and area of Tuscany each week, all while cooking exceptional meals.


Wednesdays, 3-5:30pm – Italian Wine Culture

Wine – a major Italian excellence – These classes will help you to identify and map the grapes and wines that originate from Italian terroir. Through guided wine tastings, you will gain familiarity with Italian wine culture and signature wines.


Thursdays, 3-5:30pm – Italian Baking and Pastry

How is Tuscan bread made? What is the difference between “Focaccia” and “Schiacciata”? What exactly do “biscotti” represent in Italian culture? Learn about Italian regional desserts and their qualities. While attending class you will learn the cultural staples of Italian baking and pastry such as Tiramisù or Cantuccini di Prato according to their appropriate seasons.


Fridays, 3-5:30pm – Food and Wine tours and visits in Florence

First-hand experiences in the field – Each week, you will have the opportunity to explore the city center and taste special products and dishes that distinguish Tuscany from the rest of Italy. From the elegant “Enoteca” to the more traditional “Vinaino,” a specific focus is placed on street food and its implications in contemporary Florence. Class tours will guide you through a direct and cultural on-site experience.

2 Week Programs

Group Classes

Hands-on group cooking classes available on a weekly basis. Classes are taught by local professional chefs. Each class meets once a week and classes can be combined for a more intensive program. Classes are hands-on and conclude with dinner based on recipe tasting. Each participant will receive an Apicius apron. A group course on introduction to Italian wine is also offered. Please see schedule of classes below.

2 group cooking classes + 1 group wine appreciation class + 2 one-to-one cooking classes + 1 one-to-one wine appreciation class + 1 private gastronomic walking tour.


Weekly Combination Programs 2

3 group cooking classes + 1 group wine appreciation class + 2 one-to-one cooking classes + 2 one-to-one wine appreciation classes + 1 private gastronomic walking tour.

 Optional add-on: 1 hour per day of private italian language.

 Optional add-on: 1-week group language program “La vita è bella”.


Gusto Workshop

The program offers twelve different thematic areas:

  1. Grocery shopping education: fresh food markets and supermarkets,
    organic and industrially produced foods, fresh and preserved foods.
  2. Cuisine as a cultural landmark: seasonality & DOP/IGP (quality control mark)
  3. Pizza and bread in the Italian tradition

The length of each program is two weeks. Programs can be repeated by adding extra weeks.
Each program includes 2 group cooking classes + 1 group wine class per week and 10 hours of private individual tutoring on the chosen thematic area.
